Take your grilling to the next level with a few easy recipes featuring our favorite ingredient (wine) that you can add to your lineup.
Red wine pairs wonderfully with beef or lamb. For this basic Red Wine Marinade, the fresh herbs really give it a Mediterranean vibe. If you want something simpler – don’t have the fresh herbs on hand – just substitute lots of kosher salt and fresh ground pepper.
Simple Red Wine Marinade
2 tablespoons minced garlic (pre-minced or about 6-8 cloves)
1 tablespoons minced fresh rosemary leaves
2 teaspoons minced fresh thyme leaves
¼ cup olive oil
¼ cup red wine (We used Gooseneck Vineyards Heritage Red Blend)
2 tablespoons red wine vinegar
Kosher salt to taste
Thinking chicken instead? We love this Garlic, Thyme and Wine Marinade with chicken cutlets. The chicken only needs to marinade for about 20-30 minutes and cooks up in a flash! When you’re really crunched for time, serve with couscous and throw some veggies on the grill while you cook the chicken. You’ll have a delicious, healthy dinner on the table in 30 minutes.
Garlic, Thyme and Wine Marinade
2 tablespoons olive oil
6 garlic cloves, minced
¼ cup white-wine (We used Gooseneck Vineyards Sauvignon Blanc)
3 tablespoons fresh thyme leaves, chopped, plus sprigs for garnish, if desired
Coarse salt and ground pepper
3 pounds chicken cutlets (about 12)
Some Grilling Tips
- Allowing your grill to heat up for about 15 minutes or so will give foods a nice sear and lock in juices
- Keeping your grill clean helps reduce flare ups. Thoroughly clean under the grates twice a year.
- A light coat of olive oil prior to cooking will help grilled veggies stay juicy and avoid sticking to the grill.
- A grill pan is ideal for cooking delicate fish or veggies without having them fall through the grates.
- When making burgers, make a small hole in the center, allowing the heat to cook through the meat and create a more level burger.
- Ideal marinating time is 30 minutes to 2 hours. Marinating food for more than 2 hours can result in mushy meat.
